THE JOURNEY OF THE BANANA

 

In me, my mother is a hero.
Indeed, when I was young, my father often went away. She is both mother and father. She used to be the chief accountant of a business with thousands of employees and was also a sweeper, but I have never seen her complain about anything. She taught me that fists can never solve anything, but to be a man you must be brave. When I asked, "Do you have any secrets in business?" - She laughed: "Find a way to turn trash into money, only then will no one compete with you."
When I was eight years old, I and everyone in my family made fermented products such as apricot juice, fruit soaked water, Ban soy sauce, rice wine, and vinegar using the experience left by my grandparents. In the mid-90s, I went to Saigon and joined the craft beer industry at Binh Tay market.
 
Many years later, traveling to many places, learning about agriculture and working with farmers, I had a special affinity with bananas that grow in the tropical climate of Vietnam. The first product I cooked was banana honey.
 
Everyone knows honey, molasses and many other types of honey in the world. But banana honey, which is very delicious and nutritious, no one has made. So I became friends with the banana.
 
For years, researching many methods and applying many techniques, we had to throw away hundreds of tons of bananas. There was a time when my partner and I had to use countless bananas to make fertilizer. Just squeeze a banana and you'll get a smoothie, not "honey". After countless trials and tribulations, the first drops of banana honey were born. Golden, sweet, fragrant and gentle, not sharp like honey. Banana molasses is very delicious when combined with dishes and drinks in Asian and Western cultures. More importantly, its sweetness and sugar are not detrimental to health.
 
Born into a medical family, I believe that the best medicine is food. Jans products are therefore carefully researched for their ingredients, quality and impact on users' health.
 
The main components in human blood include protein, fat, carbohydrates and oxygen. About 80% of Jan's products have sweetness and sugar from fruits and bananas.
Do starch and sugar in Jan's products affect health? Many people have asked me. Have. But if your body's biochemistry is guaranteed, meaning your digestive system is good, absorbing this organic sugar is no longer a problem.
 
A healthy digestive system will help with good digestion and metabolism. Plant-based sweeteners do not cause high blood sugar levels or diabetes or heart disease. Over the past 26 years, Jan's lenmen has been faithful to the philosophy of bringing happiness from within and enjoyment from the outside. We have created the outside world in many ways, but seem to forget to create ourselves from within. If you want total happiness, turning inward is the only way out.
 
And yet, a system for making nutritious food that doesn't harm the planet is sorely needed. What we eat can harm not only our bodies but also nature and species, reducing biodiversity and causing serious pollution. About a quarter of greenhouse gas emissions each year come from the way we produce food. Chemical fertilizers, pesticides, herbicides... have terribly poisoned Mother Earth. Therefore, food production methods that preserve nutrition without harming the environment are extremely necessary in this day and age.
For many years in the fields, Jan's lenmen hopes to bring Vietnamese agricultural products with unique flavors and leading quality. Most importantly, organic agricultural products do not need to wear fancy clothes. It must be as good and cheap as other products, and must be available to everyone.
